Unfortunately, our meal plans are probably not the best option if you’re looking to cook just a single serving of each our meals. It’s definitely doable but may not be the best use of your time and money unless you’re really good about freezing leftover ingredients for future meals. For example, if you scale down to just a single serving, a meal may then require just ¼ can (or cup) of beans. You can divide the remainder of the beans into 3 separate portions and freeze them for future use or find a way to use the rest of them that week (say breakfast burritos?). However, that definitely takes a bit more discipline and work from you. If you’re okay with that, then definitely give us a try! Remember, you can always taste test first to see if it works for you too.
